aref2 The oil pressed from filbert varieties of different repining times of nuts grown in different areas of the Krasnodar Krai. Before oil is produced, nuts were stored in shell or hulled for 7 months at t24 degrees C. The greatest iodine number was observed in the variety Lombardsky krasny - 80.51%; the growing conditions has a slight influence on it, which was more constant in more stable growing soil-climatic conditions. The most resistance to oxidative spoilage under storage in shell was exhibited by nut kernels of the Cherkessky-2 variety from the Verkhny Yurt area (84.75%); the study showed a slight variability of the refraction coefficient for varieties 1.4694±0.0016; in the fatty oils of the studied filbert varieties unsaturated acids prevail, especially oleic acid, its content varies with a variety from 80 to 84%; as to the qualities with reference to physiological activity and nutritive value of oil (K-1 and K-2) the varieties Lombardsky krasny (9.8; 14) and President (9.2; 14.9), as well as the variety Cherkessky-2 (7.4; 11.6) are distinguished (in brackets ratios of sums of unsaturated and saturated acids K-1 and a ratio of oleic and linolic acids K-2) the varieties Lombardsky krasny (9.8; 14) and President (9.2; 14.9), as well as the variety Cherkessky-2 (7.4; 11.6)
